These leaves are rolled and dried immediately after picking, so there is minimal oxidation - which gives white tea its characteristic light color and flavor. Even flavored white teas use very subtle flavors to complement rather than overpower such a delicate tea. This tea is only picked a few days to a few weeks a year - it is quite rare and very high in antioxidants.
